mmmmmmmm cooooookies

 I have not been very good at getting in my cross training this week.. boo. They have been really half- you know what. But both my kids have been waking me up in the wee hours of the night.. all week!! If I don't get a complete all the way through night sleep, I'm just not at my best. I'm really praying tonight will be uninterrupted. Saturday is my 10 mile run. I'm hoping to wake up and run with a local running group. It will make my 10 miles a lot less lonely... but its not happening if I'm this tired.
Like a year ago I did a blog about getting our playroom/sitting room done... We just now got a couch. Its pathetic. But yay! We have a couch (actually a futon). My husband and I were talking about how little we've done in the house, and we've lived here almost a year. The plan is to hit up Ikea this weekend and get some bookshelves and other organization, and make our one year anniversary in this house a comfortable (and complete) one.
Maybe because the lack of sleep, but I woke up this morning really really needing something sweet. I had peanut butter and oatmeal and general direction. I didn't want flour and if I could avoid it, no sugar. I found this cookie recipe. It was what I was looking for, and I knew I could tweak it to my craving.

Flour less oatmeal peanut butter cookies
1 1/2 cups rolled oats
1/4 cup sugar (can use all honey and not add additional, or any sugar sub)
2-3 tablespoons honey
1/2 cup peanut butter
1/2 scoop chocolate protein powder
1/2 tsp baking powder
1 tablespoon ground flax seed
1 egg
2 tbsp butter, softened



Directions:
Preheat oven to 350*F.
Combine all ingredients in a large bowl. Mix well until batter is blended evenly.
Roll dough into balls and place on lightly greased cookie sheet
Bake cookies for approximately 10-12 minutes.

 These came out yummy. I don't think just the 1/4 of sugar the original recipe would have been sweet enough, so the honey was a good addition. Next time I'm going to remove the sugar all together and just use honey. I also think some carob or chocolate chips (or peanut butter yum!), but I didn't have any on hand.  So there you go! A flour less (sugarless if you sub) peanut butter cookie. With a little added protein for good measure.
